Sushi leftovers dinner
If you are anything like me you probably hate throwing away perfectly good food. You might be smart enough to calculate every last ingredient of your sushi night, or, you might be left out with a few pieces of fish and a bowl of sushi rice you stick back into the fridge not having any particular destiny in mind for it. Worry not, the following recipe will come to the rescue.
Any thing but more sushi
I can imagine the last thing you want after filling up on sushi the night before is more sushi for lunch. That’s why our sushi leftovers recipe is anything but sushi. It brings a completely new direction those same ingredients you used last night. Enough with the introduction though. Let’s get to work.
Chop it down
Dice the leftover fish you have and give it a quick 2-3 minutes fry on high heat. You can add a bit of oil if you like. I sure did.
Soy time
Next, add some soy sauce. The same one you used to serve the sushi last night. Assuming you cleaned all the soy bowls already, you might want to pour straight from the bottle. I used about 4 table spoons here and added about half a tablespoon of sugar. Let it simmer like this for 5 minutes on medium heat. Stir it a bit to make sure the sugary soy love is well spread around.
When the fish has gone dark and sticky enough for you, that’s time to pour it all on the rice leftovers.
Plato
When plating your leftover dish, give a bit of thought to looks and taste as last touch. I chopped a bit of mint, and a few slices of dry chilli from my spice garden. Indeed sesame seeds could have done wonders here, some curry or lemon grass if you have it, maybe some chopped ginger. En voila!

Delicious! I actually order extra salmon to make sure I can make a salmon bowl the next day; I just do a quick light 1 min cook to keep it rare; I’m starting to get requests for this on actual sushi night!
I rarely have leftover sushi, but this would make such a nice, simple meal for days when I’m pressed for time. It would be lovely served with steamed broccoli!

Add Poke King Hawaiian poke sauce to the fish when pan-searing the next day. Also, other suggested toppings: fresh chopped scallions and/or cilantro!
