How do I store sushi?

Postby Carol » Mon Sep 24, 2007 10:51 pm

Sushi is fantastic freshly made, but if I want to store it overnight in the refrigerator for school lunches next day the nori becomes soggy.  Does anyone know what I can do to improve sushi life span???

sushi will become soggy because the nori is dried seaweed. There's no way around it to keep it longer. Also the rice will become grainy from the cold and will harden the next day. So it would be best to not save any sushi from the day before, it won't taste the same.

I agree with sushiqueen 1000%! Refrigerated sushi = nasty!

However that being said, there are a few things you can do to avoid wasting leftover sushi rice. The simplest and one of the tastiest is to make a "spicy tuna biscuit."

The next time you get finished making all the sushi you intend to eat for the day and have a little left over shari, form it into flattened rice balls "onigiri style." The Japanese usually form these into triangular patties, but simple round "hamburger shaped" patties are more practical for our application. Next wrap each patty separately in plastic and refrigerate till the next day.

The next day, prepare the spicy tuna mixture by mixing minced sashimi grade tuna or scraped tuna "nakaochi" with a little mayonaise, sriracha, and spicy sesame oil to taste. When ready, place each patty under the broiler element of a toaster oven, turning when lightly browned until they are evenly done and crispy on the outside. Remove from the toaster oven and top with a layer of spicy tuna mixture while the rice biscuits are still warm.

Dress with a little shoyu or ponzu and garnish with sesame seeds or katsuobushi flakes. Serve immediately - yum.

The Japanese usually anatomy these into triangular patties, but simple annular "hamburger shaped" patties are added applied for our application. Next blanket anniversary patty alone in artificial and air-condition till the next day.
