How to make Unagi sauce at home?
To make Unagi sauce at home you’ll need:
- 1/2 cup soy sauce
- 1/2 cup mirin (sweet rice wine)
- 1/4 cup sugar
Instructions:
Mix ingredients together, and pour into a small pan. Put on low heat and simmer for a few minutes until sugar dissolves, while stirring with a wooden spoon. Once sugar is fully dissolved, let the sauce cool, and keep in fridge for use.
This happened to me. It’s not nice. Use a wooden spoon.
I didn’t know eel sauce was so simple to make! I already have all the ingredients on hand. I’ll definitely give it a try. I think it will really bring my homemade sushi to the next level.

Hey! This is where my search ends on how to prepare Unagi sauce. But must it be a wooden spoon? For the stirring.. Just curios. Thanks!
yes it must be a wooden spoon if it is not wooden it will ruin the sauce and bring cursed Japanese ghosts to haunt you for the rest of eternity
May I know the correct temperature for unagi sauce in bottle? Thank you
It should be stored in the refrigerator when not in use, if that’s what you mean.
